www.GoodinEveryGrain.ca Good in Every Grain 34 Ingredients: • 19 oz can no-salt-added chickpeas, drained • 1/4 cup silken tofu • 1/4 cup fresh lemon juice • 1 tbsp extra virgin olive oil • 2 tbsp soy butter (such as Wowbutter) • 2 tsp ground cumin • 1 clove garlic, minced • 1/4 tsp freshly ground blackpepper Directions: 1. In a food processor, add chickpeas, tofu, lemon juice, soy butter, oil, cumin, and garlic. 2. Process until smooth. 3. Add pepper, adjusting to taste. 4. Serve with raw vegetables or whole grain crackers for dipping. SOY HUMMUS In this unique version of hummus, traditional sesame seed tahini is replaced with the equally “nutty” taste of soy butter. Using soy butter makes this snack school-safe for classrooms where nuts and seeds are restricted. Yield: 5 servings Prep time: 5 minutes Cook time: 5 minutes CORNMEAL BREAKFAST MUFFINS Cornmeal Raisin Breakfast Muffins are the perfect on the go breakfast for busy work or school mornings. Make these ahead of time and store in an airtight container for up to one week, or store in the freezer for up to one month. Ingredients: • 1 cup finely ground cornmeal • 1 1/2 cups flour • 1/3 cup granulated sugar • 1/2 tsp salt • 4 tsp baking powder • 1 egg • 1 cup milk • 1/4 cup corn oil • 1 cup raisins Directions: 1. Preheat oven to 450° F. 2. Add cornmeal, flour, sugar, salt, baking powder and raisins into a large bowl and whisk together. 3. Combine egg, milk, and corn oil in a large bowl, whisk together. 4. Pour wet ingredients into dry ingredients and stir until just combined. Don’t overmix. 5. Pour batter into a greased muffin tin, filling each cup about halfway. Bake for 13 - 17 minutes or until toothpick stuck in the center comes out mostly clean. 6. Serve warm for an easy on the go breakfast.
