34 Good in Every Grain www.GoodinEveryGrain.ca WHOLE GRAINS MONTH September is Whole Grains Month, where we celebrate the goodness of Ontario whole grains! All of Ontario’s grains (barley, corn, oats, soybeans, and wheat) can be consumed in a variety of ways as whole grain. This means all parts of the grain (the bran, the germ, and the endosperm) are used, and many health professionals and studies show that whole grains can help reduce your risk of heart disease, diabetes, and some cancers while aiding in healthy digestion. This month, the Good in Every Grain team will promote the importance of whole grains and many nutritious and delicious recipes featuring the goodness of Ontario’s grain. Check out our recipe for a unique taste of oatmeal with blueberries, another ingredient that is high in fibre, vitamin C, vitamin K, and manganese. BLUEBERRY BAKED OATMEAL Keep your mind alert and your heart healthy with this delicious recipe for blueberry baked oatmeal, which is a great make-ahead breakfast for your family or to feed a crowd! Ingredients • 2 cups old-fashioned oats • 1/4 cup all-purpose flour • 1 tsp baking powder • 1/4 tsp baking soda • 1/2 tsp sea salt • 2 tsp ground cinnamon • 1/4 cup granulated sugar • 2 tsp butter, melted • 2 cups soy milk (or regular) • 1/4 cup vanilla Greek yogurt • 2 eggs • 2 tsp pure vanilla extract • 2 cups blueberries (fresh or frozen) • 1 tbsp honey, for serving YIELD: 8 servings PREP TIME: 10 minutes COOK TIME: 35 minutes Directions 1. Preheat oven to 350 °F. Grease a 9x13” glass baking dish and set aside. 2. In a small bowl, combine oats, flour, baking powder, baking soda, salt, sugar, and cinnamon. Set aside. 3. In a separate, small microwave-safe bowl, melt butter. 4. Whisk together Greek yogurt, eggs, and vanilla in a large bowl until combined. 5. Add melted butter and milk and whisk until combined. 6. Add dry ingredients to wet ingredients and mix well. 7. Gently fold the blueberries into the mixture. 8. Spread evenly in a 9x13” pan. 9. Bake at 350 °F for 30-40 minutes (shorter if using fresh berries, longer if using frozen). The oatmeal should be browned on the top, and the top should spring back when you gently touch it with your finger. Top with honey. 10. Let cool for 15 minutes and serve warm. You can also refrigerate after baking and serve cold!
